Ingredients

  • 20g fresh coriander
  • 20g fresh parsley
  • 1 small onion
  • 2 tins chopped tomatoes
  • 1 clove garlic
  • 5 tsp olive oil
  • 1 or 2 chillies (optional to taste)
  • 2 - 3 Mugs of pasta
  • Salt and Pepper (ground black pepper is good)

Directions:

  1. Drain the juice from the tins of tomatoes using a sieve.

  2. Peel the onion and chop into very small pieces.
  3. Remove the stalks from the Coriander and chop into small pieces.
  4. Finely chop the chillies.
  5. Roughly chop the clove of garlic.
  6. Remove the stalks from the coriander and roughly chop into pieces about twice the size of the coriander.
  7. Place the olive oil in a frying pan on a medium to high heat.
  8. Place the pasta in a saucepan add water and bring to the boil.
  9. Remember to stir occasionly and don't let it boil dry.
  10. Add the onions to the olive oil and fry for about a minute.
  11. Add the garlic to the frying pan.
  12. Stir the coriander and chillies in with the onions and olive oil.
  13. Stir for about 1 minute and add the tomatoes (minus the juice).
  14. Add a little salt and pepper to the frying pan and stir.
  15. Continue to stir the contents of the frying pan until the pasta is cooked.
  16. When the pasta is cooked drain the water and add to a serving bowl, pour the contents of the frying pan and the parsley on top of the pasta. Mix the sauce and pasta together using a spoon (or fork).
  17. Serve straight away. This meal can be served as a complete meal, alternatively you could serve it with a salad, a Jacket potato, warm bread rolls with butter, or baby new potatoes.
