What to look for when buying cheese and how to store it

When buying cheese, rely on appearance and smell if possible. Hard and firm cheeses should be moist but not sweaty and should not have any mould (unless they are blue-veined), soft ripened cheeses such as Brie and Camembert should feel stringy and creamy throughout. Soft fresh cheese should be refrigerated, although other cheeses can be stored in a cool place such as a larder. Keep them well wrapped or covered.
