How To Make Chicken Tikka Masala

Indian cuisine has come a far way in the past few years; not only it has crossed boundaries and become popular in the west, but it also has a taste that makes one crave for more. The Indian platter has a lot to offer to all people all over the world. The subtle and sophisticated use of spices and herbs creates an aromatic experience in cooking. I share a passion for cooking and love the way food has an effect on people. Chicken tikka masala is a very popular dish among many cultures and here is a step-by-step process to let you master it right in the comfort of your home.

There are two steps that follow in making this dish -- firstly the marinating, and second the sauce (gravy in authentic terms).

Ingredients for the marinade:

How To Make Risotto

A risotto is a delicious Italian main dish. It's basically flavored rice, and it can be made in a huge variety of flavors. It can be served with meat and always with a good wine! First of all, find the ingredients for your risotto. It might be a little difficult to find the right ingredients. You will need:

2 cups of Italian rice, carnaroli rice or arbório rice

One medium onion

1 1/2 Tablespoons butter or 2 Tablespoons of oil

4 ounces vegetable sauce (can be canned) and 6 1/2 cups water or alternatively, 7 cups of broth

Parmesan cheese

Dry white wine (can be a cheap one, not too sweet)

1 teaspoon of saffron (the powdered one)

Directions:

How To Cook Ugali

Ugali is an accompaniment meal commonly found in the Western Province in Kenya. It is prepared from mainly maize flour, but sorghum or millet can also be used. Ugali prepared from maize flour is whitish in color, and brown when either sorghum or millet is used. It is a meal very rich in carbohydrates and starch, among other nutrients.

I am going to take you through a step-by-step process of preparing it.

Ingredients:

1 kg sifted maize flour

1 liter of clean water

A cooking stick

Cooking pan for boiling the water and cooking ugali (in Swahili, a cooking pan is called Sufuria)

Directions:

How To Make Flour Tortillas

If you've ever been to Mexico, chances are that you've seen women effortlessly rolling out tortilla after tortilla. Although flour tortillas are actually much harder to make than they appear – especially if you're watching someone with decades of practice – it is a skill that you can learn. It's worth the effort, especially when you consider how much better flour tortillas taste when made by hand!

Ingredients:

3 cups of all-purpose flour

1 teaspoon of salt

1 1/2 teaspoon of baking powder

1/4 cup cold vegetable shortening

1 1/4 cup warm water.

Lard is traditionally used, but most people today prefer to use vegetable shortening for health reasons.

Directions:

Wary to serve a re-heated pork menu to your family? Serve it as another dish, Adobo! It can be made up of fresh or left-over meat of chicken and pork (with the fat), sliced into chunks (1 inch thick from side to side), or as flakes with experimental garnishes for effect. It can even be served fried for breakfast the next day!

Just like any other dish, you can experiment on this versatile Philippine Oriental menu as long as its main ingredients and composition are not greatly altered. Adobo is best cooked in a thick pot with a tight lid. Prepare and do the following steps:

How To Cook Chicken Tinola (Tinolang Manok)

This chicken recipe is one of the famous and favorite dishes in the Philippines. You don't need to be a master-chef to cook this. I can suggest this dish for the beginner. In fact, this is the first recipe that I learned to cook!

Most of the vegetables ingredients in Tinolang Manok can be found in Asian stores (Filipino or Indian Stores). You can buy them fresh or frozen. But if you're too far away or too lazy to go around and find a Filipino store, you can be more creative and look for substitute vegetables. For example, you can use potatoes for the unripe papaya/upo/sayote (chayote squash), and you can also use spinach leaves for the sili (chili)/malunggay leaves.

INGREDIENTS:

How To Make a California Roll

For many people, sushi is one of those foods they have to be convinced to try. I was one of those people.

I am a bit of a coward when it comes to trying new foods; I blame my British upbringing for that. Sushi is one food that I had trouble "getting into" and I admit that I still don't like most sushi. California rolls were the first sushi that I was introduced to, and they remain my favorite. Of course, a purist might say, "that's not real sushi", but it was a good first sushi dish for me to try. Now I have even tried and enjoyed barbequed eel, but that is another story...

California rolls are different from other sushi rolls in that most restaurants serve them "inside-out" with the rice on the outside as opposed to seaweed (nori). The ingredients for making the California roll should be available in most grocery stores or in specialty Asian markets.

How To Make Latkes

Although latkes are traditionally made from potatoes, they can be made from a number of other foods that can be grated: sweet potatoes, parsnips (mixed with other things!), carrots, beets, squash and even salmon. The Food Network has a list of more than 20 different kinds of latkes from a variety of ingredients, but the basic steps and techniques are the same for them all.

How To Make Japanese Breakfast

Japanese breakfast typically includes the following dishes:

A bowl of rice

Fillet of grilled salted salmon with the skin still intact

A side of pickles (cucumber, radish, and/or eggplant)

One sour plum

A bowl of miso soup

A side of Natto, or fermented soy beans

Several sheets of seasoned seaweed

While you can easily purchase rice, salmon and miso at your local grocery store, you should consider visiting an Asian grocery store to purchase the pickles, sour plum, natto and seaweed.

How To Make Curried Chickpeas (Cholay)

Recipe submitted by: Shammi Edwards.

This is a very flavourful recipe from North India, usually eaten with fried bread like bhatura or puri. I like to serve it over rice for a very filling meal. You can also try it as a quick snack over toasted bread. This recipe is much quicker to make if you use precooked canned beans, but I like to think that the authentic flavor comes from doing it the hard way!

Ingredients:
