Badger mushrooms, also known as the Portobello mushroom, are the largest among the edible mushrooms. Badger mushrooms can be grilled, baked, stir-fried or even dip fried. Grilling a Badger Mushroom
- Trim the stem end of the mushroom. This is usually tough and dry.
- Moisten the stem and cap of the mushroom with very little oil. Using an oil spray is better than a brush for this task.
- Season with salt and pepper. You may use other alternatives such as readymade sauces like barbecue or teriyaki sauce. Vinaigrette or Italian dressing would also be fine.

Stir-frying Badger Mushroom
- Trim the stem end of the mushroom.
- Slice the mushroom. The number of slices depends on the size of the mushroom and your own preference.
- Heat your frying pan over low heat.
- Melt butter, add garlic and onion. Sautee until it becomes translucent. Be careful not to burn the garlic as it will taste bitter.
- Add the mushroom, stir-fry until it releases its juice. Mushroom cooks quickly.
- Season with salt and pepper. You may add some herbs for added flavor.
- This can be served as is, but if you want some more flavor, you may add wine.
- After adding wine, stir and increase the flame to medium. Simmer for 2-3 minutes until liquid is absorbed.
Roasting Badger Mushroom
- Prepare the mushroom by trimming the stem end.
- Pre-heat your oven to 180oC or 350oF
- Season your mushroom with olive oil, salt and ground pepper. You may also rub the mushroom with your favorite pesto. This will add more flavor to the dish.
- Arrange the mushroom in a baking pan and put it in the pre-heated oven.
- Bake the mushroom for 10-12 minutes.
- The roasted or baked mushrooms are now ready to be put in a sandwich or served as an appetizer.

Steaks, fried chicken, roast turkey, fried or steamed fish are best eaten with sauces. A mushroom sauce complements these dishes with its meaty and delicious taste.
Here is how a very simple mushroom sauce is prepared.
- Melt butter in a heated saucepan.
- Add onion, garlic and roasted bell pepper. Bell pepper is seeded and peeled.
- Sauté for 2-3 minutes until onion becomes translucent.
- Add the mushroom, simmer for 3-5 minutes.
- Add the all purpose cream and season with salt and pepper.
- Simmer for another 2-3 minutes.
