Chocolate lava cakes have a deliciously warm chocolate center that oozes like lava when you cut into the cake. These individual cakes are easy to make and are sure to please all. This recipe makes about 10 cakes, but it could easily be halved to make dessert for a smaller group.
Ingredients and supplies:
- 10 ounces semisweet or bittersweet chocolate (approx. 70% cocoa for best results)
- 4/5 cup butter
- 8 eggs
- 1 1/4 cup sugar
- 1 1/4 cup flour
- Large muffin tin
- Muffin papers
- Small saucepan
- Medium saucepan
- Medium bowl
- Electric or hand mixer
- Large spoon
Prepare the supplies. Preheat the oven to 350 degrees. Place the muffin papers inside the muffin tin, and grease them well. If not greased well, the cakes will stick, and you may break into the liquid chocolate center while trying to release them from the cups.
Melt the chocolate. First, fill the medium saucepan halfway with water, and bring to a boil over high heat. While the water is heating, break the chocolate into small pieces, and place the chocolate and butter in the small saucepan. Place the small saucepan over the saucepan of boiling water until the butter and chocolate melt. Stir continuously, making sure that the chocolate does not burn. Do not place the butter/chocolate mixture directly over the heat source.
Mix the cake batter. Beat the eggs with the sugar just until combined. Do not over-mix or the eggs will become stiff. Then mix in the flour. When combined, slowly fold in the melted butter/chocolate mixture until the batter is uniform in color and texture.
Bake. Pour the mixture evenly into the large muffin tins. This recipe should make about 10 cakes. Bake for 8-12 minutes. When done baking, the inner part of the cake should be liquid while the outer part of the cake will form a crust like a regular cake. When done, the top of the cake should be springy, with liquid chocolate directly underneath the center of this crust. Do not attempt to determine doneness by sticking a toothpick in the center of the cake. A toothpick should come out with melted chocolate on it when the cake is done in the oven.
Serve. Carefully invert each chocolate cake onto its own plate, making sure not to break through the cake into the molten chocolate center. Serve the chocolate lava cakes warm with whipped cream, ice cream, or berries to balance the intense chocolate flavor. For a special treat, dust with powdered sugar before serving.
