A long time friend and I visited a city near Hollywood California 20 years ago and ate lunch at some little diner. We both ordered the same salad, and it was so good, we created our own version (give or take a few ingredients), and named it the Hollywood salad. It's not only healthy for you; it's very easy to make and everyone will want the recipe.
Ingredients:
- Spring mix
- Apples (cut and quartered)
- Fresh or canned mandarin oranges
- Fresh strawberries (tops cut off and strawberries cut in half)
- Dried cranberries
- Chopped walnuts
- 1/4 cup white wine vinegar
- 1/4 cup raspberry vinegar
- 1/4 cup honey
- 1 cup fresh raspberries
- Dash of salt and pepper
- 1/2 cup extra virgin olive oil
Directions:
- Pile a cold salad plate with fresh spring mix.
- Place 4 of the quartered apples equally around the spring mix.
- Spread approximately 4 to 6 mandarin orange sections around the spring mix.
- Sprinkle strawberry halves over spring mix, apples, and oranges.
- Throw some of the dried cranberries over all, and top with the chopped walnuts.
- Make your vinaigrette. Place in a blender the white wine vinegar, raspberry vinegar, honey, fresh raspberries and a dash of salt and pepper.
- With blender lid off, using lowest speed, very slowly add 1/2 cup extra virgin olive oil to raspberry mixture. Mix well.
- Drizzle vinaigrette over your Hollywood salad and enjoy!
Quick Tips:
You can add a scoop of your favorite chicken or tuna salad recipe to the center of your salad if you choose.
Add 1/2 cup of fresh basil to vinaigrette (optional).
