Hot, cold, or warm it can be enjoyed at breakfast or as a snack. With a salad of green leaves it is a complete meal. Legitimate Potato tortilla is made only with potatoes, onions, eggs, olive oil and salt. But there are many variations: with and without onion, with green peppers and red, with ham, zucchini etc...
Step 1:

Ingredients

  • 5 eggs
  • 2 tablespoons flour
  • 2 tablespoons grated cheese
  • 1 teaspoon (tea) of salt
  • 1 pinch baking powder
  • 4 sliced boiled potatoes
  • ½ cup (tea) scallion
  • 1 sliced onion
  • 1 cup (tea) of mozzarella
  • Spices to taste
  • oil for frying
  • Grated cheese to sprinkle
Step 2:

METHOD OF MAKING

  • In a container, place the eggs and beat with a fork.
  • Pour the rest of mixture. Fry on both sides.
Step 3:
  • Add the flour, grated cheese and salt. Stir.
  • Add the baking powder and stir.
Step 4:
  • Place the mixture obtained in a frying pan greased with oil, and add the sliced boiled potatoes, onion, scallions, mozzarella cheese and seasonings.
  • Fry briefly.
  • Add the rest of mixture.
  • Fry on both sides.
  • Turn off.
Step 5:

Place in a dish, and sprinkle grated cheese to serve.
