Key lime pie is a desert that originated in the Florida Keys. It’s traditionally made of lime juice, condensed milk, and egg yolks in a pie crust. The pie is named after the Key limes that grow naturally throughout the area. These limes are much tarter and have a stronger aroma than the limes found in most supermarkets. Try this recipe to make a quick and easy key lime pie in less than 30 minutes.
Prepare the egg yolks. Beat four egg yolks in a small mixing bowl. Add one drop of green food coloring, if desired. The food coloring is not traditional, or necessary, but many people choose to add it to give the pie a green “lime” appearance.
Combine ingredients. Mix in one (14 oz.) can of sweetened condensed milk with the egg yolks. Add ½ cup Key lime juice, and 2 teaspoons Key lime juice. If you don’t have Key lime juice and/or zest, you can use regular lime. However, this won’t be a traditional Key lime pie if you don’t use Key limes.
Add filling to crust and bake. Pour the mixture into a prepared graham cracker crust. Bake at 325 degrees F for 20 minutes, or until a knife inserted into the middle leaves a visible mark. Another test you can use to tell if the pie is done is to shake the pan slightly and watch the center. If it jiggles slightly, the pie is ready to be removed from the oven.
Chill and serve. Place the pie in the refrigerator for one hour, or until completely chilled. Alternatively, you can place the pie in the freezer for 15-20 minutes, but be careful not to freeze. Sprinkle with zest of lime, and garnish with fresh lime, or sliced strawberries, if desired. Whipped topping or whipped cream may also be added. Serve cold.
If you need to cover the pie, use the plastic lid that comes with the pie crust. Do not use plastic wrap or foil, as this will ruin the smooth finish of the pie. If you dislike graham cracker crusts, you can use a shortbread crust or traditional flour crust instead. You can also make your own favorite pie crust and add the Key lime pie filling.
This pie is very versatile and you can do many things with it. Try adding a traditional meringue topping instead of whipped cream for added flavor and texture. No matter how you slice it, this fast and easy key lime pie is sure to please.
