How To Make a Rhubarb Dessert Cake

Springtime Rhubarb Cake

Springtime is the season for rhubarb.  Most people think of rhubarb crisp, or maybe even rhubarb wine if you are old enough, but my recipe is a rhubarb cake.  It is so moist and delicious that I look forward to baking this cake.  Personally, I do not like the taste of rhubarb, but in this cake, you can't even tell that rhubarb is in it. 

Step 1

Preheat the oven to 350 degrees.

Spray the bottom of a 13 x 9 cake pan.  

Step 2

Cream together:

1 ½ cups brown sugar

½ cup shortening

1 egg

Step 3

In one bowl mix together:

2 cups flour

½ teaspoon salt

1 teaspoon soda

In a measuring cup add: 

1 cup milk

1 teaspoon vanilla

Add these ingredients alternately to creamed mixture, beginning with the milk and ending with milk. 

Step 4

Mix in:

2 cups finely chopped rhubarb

Step 5

Pour in a 13 x 9 inch cake pan.

Step 6

Top with a mixture of:

½ cup sugar

½ to 1 teaspoon cinnamon

1 cup coconut (optional)

Step 7

Bake at 350 degrees for 30 to 40 minutes. Test to see if it is done by sticking a tooth pick, or a cake tester, in the middle.

Cool, cut and then enjoy.

This cake is delicious on its own, or with a dollop of whip cream on the top.  Even a scoop of ice cream wouldn't hurt a thing.  My family loves this cake and so do our friends.  They are always stopping by for a cup of coffee, or a glass of tea and a piece of this cake. As it bakes, the cinnamon acts as a calling card through the house and out to the sidewalk if the windows are open.  Try some while the season is here.  You won't be disappointed.
