How To Make a White Cake Using Box Mix

This is the best cake I have ever tasted and my favorite recipe. You can adapt it to fit many flavors of cake and use it for wedding cakes or stacked cakes. This is a recipe for a cake extender...it will get you more cake mix out of 1 box mix! Add chocolate chips to it, espresso powder to the water for a mocha cake or different flavorings in place of the vanilla...It is AMAZING!

Step 1

Sift together:

  • 1 box white cake mix
  • 1 cup of flour
  • 1 cup of sugar
  • 3/4 teaspoon salt

Step 2

In a separate bowl combine:

  • 4 egg whites
  • 2 teaspoons vanilla - or 1 tsp vanilla and 1 tsp almond extract (or your other favorite flavoring)
  • 1 cup sour cream
  • 1 1/3 cup water
  • 1/8 cup oil

Step 3

Add to dry ingredients and mix just until combined...DO NOT OVERMIX!

Step 4

Coat pans with non stick spray or parchment paper. Bake at 325 degrees for 50 minutes for a large sheet cake or 30-40 minutes for smaller cakes.


This recipe makes one 11x15 cake or two 9 square inch cakes.
