How To Make Alfredo Sauce

Alfredo sauce can be hard to get right, but if you follow this recipe you'll be able to make delicious alfredo sauce in no time. It involves only a few minutes, and uses only 5 ingredients. Next time you have a pasta craving, try making your own alfredo sauce!

Step 1

 Ingredients and supplies:

  • 1/4 cup unsalted butter (half a stick) or 1/2 cup cream cheese
  • 1 cup heavy cream
  • 1 cup parmesan cheese, finely grated
  • 1/2 teaspoon freshly ground pepper
  • Fresh chopped flat leaf Italian parsley, for garnish
  • Saucepan
  • Whisk

Step 2

Melt the ingredients. In a saucepan, melt the butter or cream cheese and cream together over low heat. You can do this while the pasta is cooking, and the sauce will be ready by the time the pasta is done cooking. Be sure to keep it on low heat, or your sauce could curdle or burn. This should take just a few minutes, so keep your eye on it. The minute they have melted together, turn the burner off. Make sure there are no lumps in your sauce by whisking it quickly.

Step 3

Add seasonings. Now, add a dash of freshly ground pepper and a little parsley, saving the rest for use as a garnish.

Step 4

Stir in cheese. Now, stir in the parmesan cheese. You may need to briefly return the pan to low heat to get the cheese to melt and mix with the butter and cream. Again, be sure not to overheat your sauce, which is easy to do.

Step 5

Enjoy! Traditionally, alfredo sauce is served over fettuccini, although you can also serve it over chicken or with other types of pasta. This simple recipe can be used for a variety of dishes.  If the sauce seems thin, let it sit for a minute. As it cools, the alfredo sauce will become thicker. You can also add a little more cream. Use the alfredo sauce immediately; it's not a good item to make ahead of time. If you let it sit for awhile, it will develop a skin on the top; simply reheat on low heat to help the skin melt again. Garnish your sauce with a bit of freshly chopped parsley.

Canned alfredo sauce has many more ingredients than this simple homemade sauce. Wouldn't you rather choose an alfredo sauce with pronounceable ingredients? Homemade alfredo sauce tastes delicious, and is much more natural. You can add different ingredients like cooked chicken, sautéed mushrooms, a crushed glove of garlic, or tomatoes to your alfredo sauce. Once you have mastered this basic recipe, try altering the cheese you use. For example, you can substitute Romano or Asiago cheese or mozzarella for some of the parmesan cheese.
