Step 1

Ingredients and supplies:

  • 1 large egg
  • 1 teaspoon Asian seasoning
  • 4 chicken breasts
  • 2 1/3 ounces cornstarch
  • 1 1/2 fl oz chicken stock/broth
  • 3 fl ounces lemon juice
  • 1 chili
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons lemon zest
  • 3 tablespoons peanut oil
  • 1 1/2 teaspoon cornstarch'
  • 2 teaspoons ginger
  • 1 garlic clove
  • 3 green onion stalks
  • 1 tablespoon toasted sesame seeds
  • Fresh coriander, for garnish
  • 2 small bowls
  • Medium bowl
  • Large spoon
  • Wok or large frying pan
  • Slotted spoon
  • Paper towels

Step 2

Prepare the ingredients. Beat the egg in a small bowl. In another small bowl, dissolve the cornstarch in 1 tablespoon of water. Cut the raw chicken breasts into strips, and chop the chili. Mince the ginger and garlic clove, and slice the green onions. Finally, chop the fresh coriander.

Step 3

Coat the chicken. Dip each chicken slice into the cornstarch-water mixture. Then, dip them in the egg. Finally, place them in the bowl of cornstarch again. Set each piece of chicken aside until all of the chicken slices have been coated.

Step 4

Prepare the sauce. In the medium bowl, combine the chicken broth, lemon juice, soy sauce, brown sugar, lemon zest, and chopped chili. Mix with a spoon until all ingredients are combined, and then set the sauce aside until the chicken is cooked.

Step 5

Fry the chicken. Heat the oil over medium-high heat in a large wok or frying pan. When hot, add the chicken in small batches. Turn frequently until the chicken becomes crispy. Remove using a slotted spoon, and place fried chicken onto paper towels to absorb any excess oil.

Step 6

Cook the sauce. Once the chicken is fully cooked, discard most of the oil in the pan, leaving a little to cook the sauce. First add the ginger and garlic to the pan. Fry for 30 seconds while stirring. Then add the lemon sauce, and bring to a boil. Then add the cornstarch-water mixture leftover from cooking the chicken. Cook until the sauce thickens. Then add the cooked chicken back into the wok, and cook until the chicken has become coated in the sauce. Finally, add the remaining ingredients, and remove the wok from the heat.

This lemon chicken dish combines a unique mixture of flavors. It is sure to please adults and children alike. This recipe serves approximately 4 people, but it can easily be doubled or tripled for a large dinner party. Just remember to cook the chicken in batches, not all at once.
