If you love beer you'll be happy to know it's not just for drinking. Beer can also be added as a flavor enhancing ingredient to many delicious recipes. One of my favorite uses for beer (besides drinking it of course) is to make great tasting soups. Here's a delicious recipe for a mouth-watering Beef And Beer Soup:

Ingredients:

  • 1 pound round steak, cut into 1/2 inch cubes
  • 1 small zucchini, cut into 1/2 inch cubes
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 diced celery ribs
  • 4oz. sliced mushrooms
  • 1 can (15oz.) kidney beans, rinsed and drained.
  • 5 cups beef broth
  • 1 12oz. can or bottle of beer
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3/4 teaspoon dried oregano leaves
  • 1 tablespoon vegetable oil
  • Fresh herb sprig for garnish (optional)

Directions:

  1. Heat oil. Heat the oil in a 5 quart pot over medium heat.
  2. Add beef, onion, carrots, and celery to the hot oil.
  3. Cook. Stir occasionally,and allow to cook until meat is done, and the carrots and celery are slightly tender.
  4. Remove from heat.
  5. Add beer, beef broth, oregano, salt and pepper. Stir.
  6. Bring to a boil over high heat.
  7. Reduce heat to medium-low. Simmer uncovered for 45 minutes.
  8. Add kidney beans, zucchini and mushrooms. Stir.
  9. Bring to a boil over high heat.
  10. Reduce heat to medium-low. Simmer uncovered for 5 minutes or until zucchini is tender.
  11. Serve! Ladle into bowls, and garnish with fresh herb if desired.

Hi David. I also use beer when I boil ribs before barbecuing them. It makes the ribs softer.
