Prepare the bacon. Fry the bacon until it is crisp. Then drain it, and crumble into small pieces. If you don't wish to make your own bacon, you can use store-bought bacon bits, or simply leave it out if you want to make a vegan version of this broccoli salad.
Mix the dressing. In a large bowl, combine the mayonnaise, sugar, and vinegar. You can use vegan mayonnaise and omit the bacon if you wish to make a vegan salad. The dressing can be prepared a few days ahead, making this salad easy to make in a hurry.
Make the salad. Mix the broccoli, bacon, and dressing, as well as the peas, red onion, and cheese. Then mix in the sunflower seeds. You can also use cashews, toasted almonds, or raisins for this salad. Some people like to wait until the salad is finished, using the sunflower seeds or nuts as a garnish for the top. Don't worry if you don't have all of these ingredients for this salad; you can leave some of them out, if you wish. This is a very forgiving recipe. Once you have mixed the ingredients together, cover and refrigerate until the salad is cool.
