Here is a healthy version of the burrito that I make for my 2 picky eaters with my secret ingredient that they don't know about. Add this and you add extra protein.
Ingredients
- 1 pound of hamburger
- ½ an onion-chopped fine
- 1 tablespoon chili powder
- 1 tablespoon cumin
- ¼ teaspoon pepper
- Salt
- Cayenne pepper
- 1 can refried beans (My secret ingredient)
- 3 tablespoons salsa
Heat a skillet. Add hamburger and onion. With a spoon, stir occasionally to brown the meat and onion, plus break the hamburger up into small pieces.
When browned, tip the pan and with a spoon, dip the fat from the skillet.
Add chili powder, cumin, pepper, salt, and cayenne pepper. Stir well to mix.
Add the refried beans and 3 tablespoons salsa. Mix in and put the heat to low. Be sure to stir occasionally until it is heated through to keep it from sticking on the bottom of the pan.
Heat a flat skillet. When warm, place a burrito on the skillet. (I use the large ones simply because they are easier to wrap.) Heat one side, then turn over and heat the other side. Transfer to a plate. Spoon some meat mixture down the center of the burrito.
Then add:
- Various toppings
- Salsa, shredded cheddar or hot pepper cheese, lettuce
- Add your choice of toppings and fold each end over. Over the top, spread or put a dollop of sour cream.
Now all you need to do is find a comfortable chair and sit down with your family or friends, switch on your favorite television show and enjoy this wonderful meal.
Not only are these burritos tasty, but they're also good for you. You can season them up as hot as you like.
