Chicken and broccoli go together – there's just no denying this flavor combination. And then with the added bonus of extending chicken or turkey leftovers, it is a win-win situation for both you and your family.

This recipe is a layered casserole so the easiest way to make this is to measure out and prepare the ingredients first, then start layering.

Step 1:

You will need:

  • 9” x 13” casserole dish, no lid
  • Foil to cover
  • Mixing bowl
Step 2:

Ingredients:

  • 1 small bag of frozen broccoli pieces (both stems and flowerettes)
  • 2 cups cooked chicken or turkey, cubed
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 can of condensed mushroom soup (or homemade condensed mushroom soup – see How To Make Condensed Mushroom Soup)
  • 2 cups shredded cheddar cheese
  • 2 cups buttered bread crumbs (see How To Use Up Leftover Bread for homemade buttered bread crumbs)
Step 3:

Prepare Casserole:

  • Preheat oven to 350 degrees.
  • Grease the bottom of the 9” x 13” casserole dish.
  • Spread broccoli in bottom of dish in a single layer.
  • Place cubed chicken or turkey over broccoli.
  • Mix sour cream, mayonnaise, and mushroom soup in a bowl and then spread on top of poultry.
  • Sprinkle cheddar cheese on top.
  • Sprinkle buttered bread crumbs over top.
  • With your fingertips, slightly press down.
  • Top with foil and bake for 15 minutes.
  • Remove foil and bake 30 minutes longer or until bubbly around the edges.
  • Remove from oven and let stand about 5 minutes to set up.
One more suggestion for changing up this recipe -- if you have leftover fried chicken (maybe even take-out), use that in this recipe for another taste sensation.
