Chicken fajitas are a delicious Mexican favorite consisting of grilled vegetables and chicken served inside a warm flour tortilla. Often they are served so that each person can choose their own toppings and assemble their own fajita, similar to a taco bar. This recipe will make enough for about 4 people, but it is easily doubled or even tripled to feed a crowd.
Ingredients and supplies:
- 3 boneless chicken breasts
- 1 small onion
- 1/2 green pepper
- 1/2 yellow pepper
- 1/2 red pepper
- 1 tablespoon cornstarch
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon sugar
- 3/4 teaspoon chicken bouillon
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- Extra virgin olive oil
- Flour tortillas
- Cheese, sour cream, guacamole, and other toppings
- Medium saucepan or large, deep skillet
- Frying pan
Prepare the ingredients. Slice the onions and peppers into strips. Then slice the raw chicken breasts into strips, each about 1/2" thick and 3" long. The thinner the strips, the faster they will cook.
Combine the seasonings. Combine the cornstarch, chili powder, salt, paprika, sugar, chicken bouillon, onion powder, garlic powder, cayenne pepper, and cumin in a medium saucepan. Then add 1 cup of water, and heat the seasoning mixture over medium heat.
Cook the chicken. Add the chicken to the mixture, and mix well so that the seasonings coat the chicken. Cook until the chicken is done and the water has evaporated, leaving a nice sauce behind. Add a little water, if necessary, to keep the chicken from burning to the pan. Cut one or two pieces of chicken in half to ensure that they are fully cooked, not pink in the center.
Cook the vegetables. Coat the bottom of a frying pan with olive oil, and add the onions and peppers. Cook over medium heat until they become tender. Stir constantly so that they become evenly browned, not burnt. When they are done cooking, add the onions and peppers to the chicken mixture, and stir so that they become coated in the sauce.
Serve. Serve the chicken-vegetable mixture hot, with warm flour tortillas and taco-style toppings like sour cream, grated cheese, and guacamole. To warm the flour tortillas, wrap in aluminum foil and place in a warm oven while you are cooking the chicken and vegetables.
Chicken fajitas can be a great alternative to a traditional taco bar. This dish is full of flavor and sure to be a hit with everyone. The seasonings can be adjusted to make a milder or spicier dish. This recipe is a great way to make the meat stretch; just add more onions and peppers to make the fajitas last.
