Coleslaw is a quick and easy side dish that is great for a wide variety of meals. This recipe is easily doubled or even tripled to feed a crowd at your next backyard barbecue. It requires just a few ingredients and no fancy tools.
Ingredients and supplies:
- 1 head of cabbage
- 1 or more carrots
- 1 green pepper
- 1 small onion
- 8 ounces sour cream
- 1/4 cup sugar
- 1/2 cup mayonnaise
- 2 tablespoons vinegar
- 2 teaspoons celery seed
- Salt and pepper, to taste
- 2 large bowls
Prepare the ingredients. First, wash all of the vegetables. Then use a grater or knife to finely shred the cabbage and carrot. This is the most time consuming part of making coleslaw; to save time, you can purchase these ingredients pre-shredded in bags at the grocery store. Then chop the green pepper and onion.
Combine the vegetables. In a large bowl, toss the cabbage, carrot, green pepper, and onion. Mix until they are evenly distributed. Set aside while you make the dressing.
Make the dressing. In a separate bowl, combine the sour cream, mayonnaise, sugar, vinegar, celery seed, salt, and pepper. Mix well until the dressing becomes smooth. This rich, creamy dressing is the secret to good coleslaw.
Assemble the coleslaw. Pour the dressing mixture over the vegetables. Mix well to coat all of the vegetables with the mixture. Then cover, and chill for at least an hour. Coleslaw is best served cold, and this refrigeration time also allows for the flavors of the dressing to be absorbed by the vegetables. In fact, many people claim that their coleslaw tastes best after 2 or 3 days of refrigeration.
Serve. Cole slaw should be served cold. It is great as a side dish for barbecues or potlucks, and can be eaten on a sandwich or hot dog. It can be kept refrigerated for about a week. Stir just before serving to make sure there is no dressing sitting at the bottom of the bowl.
