Gather the ingredients. You will need the following ingredients to make collard greens:
- 2 pounds collard greens
- 5 cups water
- 3/4 cup chopped onion
- 6 slices partially cooked bacon
- 2 tsp salt
- 1/2 tsp Cajun seasoning
- dash of crushed red pepper
Step 2:
Prepare the collard greens. Wash the collard greens until nothing remains in the water, usually 2-3 washes. Cut out any thick parts of the stalks or veins. Coarsely chop the collard greens and set aside.
Step 3:
Cook the ingredients. While bringing the water to a boil, cook the bacon. Once the water has begun boiling, add in the onion, bacon, salt, crushed red pepper, Cajun seasoning, and collard greens. Turn down the heat to medium-low and let the mixture simmer for about an hour.
