My family loves fluffy dumplings, especially with chicken pieces, and I try to make this favorite dish often. There are several kinds of dumplings, and most dumplings are grouped into one of three categories: boiled dumplings, steamed dumplings, or baked dumplings. But whichever way you choose to cook your dumplings, they are delicious and almost melt in your mouth good.
Ingredients for the chicken:
- 1 5-6 pound stewing chicken, cut up
- 2 sprigs parsley
- 4 stalks celery
- 1 carrot, sliced
- 1 small onion, cut up
- 2 teaspoons salt
- 1/4 teaspoon pepper
Place the chicken pieces in a large pot or Dutch oven with enough water to cover the chicken. Add the parsley, the celery, the sliced carrot, the onion, the salt and the pepper. Cover this mixture and bring to a boil. Cook the chicken over low heat until the chicken is tender and almost falling from the bones, about 2 hours.
Ingredients for the dumplings:
- 1 cup sifted all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons salad oil
Sift the flour, the baking powder, and the salt together in a large mixing bowl. Combine the milk and the oil and add all at once to the dry ingredients, stirring until the mixture is completely moistened. Drop this dough from a tablespoon on top of the hot chicken and broth in the pan. Cover tightly and return the chicken to a boil. Reduce the heat, without lifting the cover and simmer about 12 minutes.
Serve these delicious dumplings with a salad or a colorful vegetable accompaniment.
And don't forget that dumplings can be used in lots of other foods as well. They are delicious on top of a hot beef stew. Surprise your family by trying the basic dumplings with new foods and recipes. Use the basic dumpling recipe and add it to your other favorite dishes.
