There is nothing like homemade pasta. Although it looks complicated, it's actually easy to make. It's guaranteed to impress your friends and family, and tastes delicious with your favorite pasta sauce.
Ingredients and supplies:
- 1 tablespoon extra virgin olive oil
- 5 eggs
- 2 cups unbleached all purpose flour
- 1 cup wheat semolina flour
- 1 tablespoon water
- Food processor or mixer
- Pasta machine or rolling pin and sharp knife
- Dish towel
Combine the ingredients. Place all of the ingredients in a large bowl or food processor, and mix until combined. After mixing the dough should have the consistency of tiny balls that stick together when you pinch them. If it is too sticky, add more flour, if it is too dry, add a little water.
Make the pasta dough. Gather the dough into a ball. Let the ball of dough rest under a damp dish towel for about 10 minutes. This will make enough pasta for about 2 people; to make more pasta, repeat the first step for combining the pasta dough ingredients, to make multiple balls of dough.
Roll the pasta. This is much easier with a pasta machine. Simply change the thickness setting to your pasta preferences, and feed in the dough about 1/3 of a ball at a time. It will come out the other end as a very long, smooth sheet of pasta about 5 inches wide. Ideally, it will have a smooth and silky texture. If you do not have a pasta machine, use a rolling pin to create very thin sheets of pasta dough. They should be about 1/8" thick. You may need to sprinkle some flour onto the surface of the dough to prevent it from sticking to your rolling pin.
Cut the pasta. Next, cut the sheets into individual pieces. Cut to about 10 inches long, and then 1/8-1/4" wide. Again, this is much easier if you have a pasta machine, but it can be done by hand.
Allow to dry. Once the pasta has been cut to the desired size, let it dry for an hour or two.
Cook the pasta. If you don't plan to use it now, you can place the fresh pasta in freezer bags. You can also refrigerate it for 2 or 3 days before cooking. It cannot be stored on a shelf like the store-bought version. To cook the fresh pasta, place a teaspoon of salt in a large pot of boiling water, and boil the pasta for 2 to 3 minutes. Fresh pasta cooks much faster than the store-bought version.
Serve. Homemade pasta can be served with any sauce you would use on store-bought pasta.
