Gyros are traditional Greek rolled sandwiches that are delicious in any form. This recipe is for gyros with lamb meatballs, but beef, lamb slices, or just about any other meat can be substituted for the lamb.
Ingredients:
- 1 pound of ground lamb
- 1/4 cup of chopped golden raisins
- 1/4 teaspoon ground cinnamon
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup bread crumbs
- 1 large egg (beaten)
- 1 bunch of scallions (chopped)
- 4 pieces of pita bread
- 1/2 cup Greek yogurt
- 2 tablespoons of fresh mint.
Directions:
- Prepare the oven. Make sure your oven rack is in the second-highest position in the oven and turn on the broiler. Line a baking sheet with aluminum foil for broiling the meat for the gyros.
- Combine ingredients for gyros. Combine chopped raisins, lamb, cinnamon, salt, pepper, bread crumbs, the beaten egg, and about 3/4 of the scallions in a large bowl.
- Shape into meatballs. After mixing all the ingredients, shape them into meatballs – about the size of golf balls – and place them on your prepared baking sheet.
- Broil the meatballs. Turn the meatballs after about 3 or 4 minutes, broiling until completely cooked. The total time for broiling should be between 6 and 8 minutes.
- Assemble the gyros! Place a piece of flat pita bread on each person's plate and add meatballs and some yogurt. Garnish it with mint and the rest of the scallions. Your gyros are now assembled!
- Serve your delicious gyros. Your friends or family are bound to be impressed – and to want more gyros!
Make sure that you take the number of people you are serving into account. It wouldn't do to run out of gyros! You may want to make extra, in case anyone wants seconds, or so that you have leftovers the next day.
