How To Make Homemade Cliff Bars

Cliff Bars are a popular brand of energy food for active people, athletes, or simply anyone who needs an energy boost. For the even more health conscious people, there is a way for you to get rid of all the unknown ingredients in a Cliff bar, and that’s to make your own. However, it may be time-consuming for people on the go so make some during your day off as it will take a few hours.

Ingredients. This guide will show you a generic way of making homemade Cliff bars, but you can always change a few of the ingredients to make them more palatable or healthy to you depending on your lifestyle. These are the ingredients that you will need.

  • 1 cup of quick cook oats,
  • ¼ cup roasted peanuts,
  • 3 tablespoons ground flaxseed,
  • 1 ¼ cup Rice Krispies,
  • ¼ cup chopped dried dates,
  •  ¼ cup honey,
  •  2 tbsp. dark brown sugar,
  • 1 tsp. vanilla,
  • ½ tsp. ground cinnamon
  • 1/3 cup of peanut butter.
  • As for the baking pan, this recipe recommends an 8 inch pan for twelve bars. However, more ingredients and a bigger pan can yield as much as 16 to 24 bars.

  1. In a large mixing bowl, combine the oats, Rice Krispies, roasted peanuts, ground flaxseed, and dates. Mix well and make sure that they are properly distributed. In a small pot or saucepan, mix the honey and the dark brown sugar, until it begins to boil over medium heat. Stir constantly so that the sugar doesn’t stick and burn in the pan, as it will give a bitter taste if this happens. Once the mixture is boiling, turn off the flame and add in the vanilla, peanut butter, and cinnamon until the mixture blends properly.
  2. Pour the sugar and other liquids from the sauce pan into the mixing bowl with your dry ingredients, making sure that all ingredients are distributed evenly. After this, grease a pan evenly making sure that all parts are covered generously. However, since the whole point of making these Cliff Bars is to be healthy, then try opting for other, healthier alternatives to oil or butter. It is recommended that you simply use non-stick grease paper at the bottom of the pan, making it easier. Press the batter firmly to the bottom of the pan so the batter is packed heavily, making it easier to solidify. Place in a cooling wire rack at room temperature to cool.
  3. When the batter has cooled and solidified, cut it into different bars, place them individually in plastic wrap then and then keep them in the fridge. You can, of course, make different shapes and various sizes to fit your needs. If you want to carry a bar around, then cut them in smaller pieces so they can fit into your bag. If you want your kids to try out something healthy, then cut them into fun shapes with cookie cutters so that they will look more appealing. The plastic wrap is to prevent condensation and freezer burn on your bars and to keep them fresh individually.
