These lamb kebabs are marinated in a spicy blend of herbs, creating an authentic Sri Lankan taste.
INGREDIENTS:
- 2 lbs lamb fillet
- 2 tablespoons cumin seeds
- 1 tablespoon black peppercorns
- 1 teaspoon turmeric
- 1 tablespoon grated ginger
- 1 onion, finely chopped
- 3 chopped garlic cloves
- 1 teaspoon salt
- 1 tablespoon chopped coriander
PREPARATION:
- Cut the lamb into 1 inch cubes and remove the fat.
- Heat the cumin seeds for about 2 minutes in a dry pan until it starts to smoke.
- Grind these cumin seeds along with the peppercorns.
- Add these and the rest of the ingredients together and marinate the lamb up to 12- 24 hours prior to grilling. Place lamb cubes in the marinade and refrigerate until ready to grill. Be sure all pieces of lamb are covered with marinade.
- Take the lamb out of the refrigerator at least 30 minutes before grilling.
- Grill the lamb as you desire and serve.
