These lamb kebabs are marinated in a spicy blend of herbs, creating an authentic Sri Lankan taste. 

INGREDIENTS:

  • 2 lbs lamb fillet
  • 2 tablespoons cumin seeds
  • 1 tablespoon black peppercorns
  • 1 teaspoon turmeric
  • 1 tablespoon grated ginger
  • 1 onion, finely chopped
  • 3 chopped garlic cloves
  • 1 teaspoon salt
  • 1 tablespoon chopped coriander

PREPARATION:

  1. Cut the lamb into 1 inch cubes and remove the fat.
  2. Heat the cumin seeds for about 2 minutes in a dry pan until it starts to smoke.
  3. Grind these cumin seeds along with the peppercorns.
  4. Add these and the rest of the ingredients together and marinate the lamb up to 12- 24 hours prior to grilling. Place lamb cubes in the marinade and refrigerate until ready to grill. Be sure all pieces of lamb are covered with marinade.
  5. Take the lamb out of the refrigerator at least 30 minutes before grilling.
  6. Grill the lamb as you desire and serve.
