- Prepare the tofu. Make sure that your tofu is drained and pressed. Sometimes, draining alone does not remove all the excess water from the tofu. Pressing can be done to draw off the remaining water from your main ingredient. To do this, put your tofu on a clean plate and lay another plate above the tofu. Add weight above the covering plate. You can use a small canned good weighing just enough to slightly press the tofu and squeeze out all the water. Pour the extracted water immediately from the plate. It is best to use tofu that has not been frozen. Crumble or mash the tofu using a fork. You can also crumble it manually using your hands. It is your preference to hash it carefully or just chop it slightly to remain chunky.
