The stew is a complete dish that is frequently cooked in many households for a filling and satisfying meal. There are a variety of ingredients you can use when making this dish. The very popular beef stew is so often served for the family and a type of comfort food that is looked forward to after a long and tiring day. A variation to this is using vegetables as its main ingredients. Vegetable stew can be cooked up with different types of veggies and is a healthy and nutritious alternative to regular stews. It doesn’t contain a lot of calories and is low on cholesterol but is as tasty and as feeling as your favorite stew. Here are two ways of cooking a delicious vegetable stew.
- Ingredients for Vegetable stew 1. For this recipe, you will need 2 potatoes cut up into small pieces, 2 carrots cut up into small pieces, 8-10 pieces of beans, cut up into small pieces, some cauliflower florets, a large onion cut into small pieces, 2 green chilies sliced lengthwise, some curry leaves, one cup of thick coconut milk, 2 cardamoms, 2 cloves, 2 pieces of cinnamon, a bit of fennel seeds that have been crushed, a teaspoon of peppercorn, and some salt to taste.
- Cooking Procedure. If you would like to save some time and energy, you may want to use a pressure cooker to tenderize your vegetables. However, you may also use an open vessel to do the job, if you prefer. Place your chopped vegetables into your pressure cooker or vessel and add in enough water to cover along with some salt. Add in your whole spices which include your cardamoms, cloves, cinnamon, fennel seeds, and peppercorns. Continue to cook until the liquid has evaporated. After this, lower your heat and place your thick coconut milk in without making it boil. Just wait for it to heat through your other ingredients. Taste and see if you need to add more salt or flavor. Add in your curry leaves before removing from heat. If you are more adventurous and want a spicier dish, add in a teaspoon of Garam masala powder, mixing it in thoroughly. You may also use instant coconut powder if you wish, instead of fresh coconut.
- Ingredients for Vegetable stew 2. Take 4 cups of quartered mushrooms, a can of coarsely chopped tomatoes, a cup of thickly sliced carrots, a cup of thickly sliced celery, 1 ½ cups of sliced onions, 3 unpeeled medium potatoes cut into chunks, 2 cloves of minced garlic, 2 cups of cooked kidney beans, a can of tomato sauce, a teaspoon of thyme (dried), a bay leaf, salt and pepper to taste, a tablespoon of vegetable oil, 3 tablespoons of flour, ¼ cup of water, and ¼ cup of red wine.
- Cooking Procedure. Heat oil in a large saucepan over medium heat. Place in your garlic, onions, carrots, mushrooms and celery to cook for about 10 minutes while stirring. Add in a little bit of water if needed. Place in the rest of your ingredients without the flour, water, and wine. Place a lid on the pan and lower your heat, allowing your veggies to tenderize for around 30 minutes. Stir every once in a while. Place in your flour and ¼ cup of water in a bowl and stir to dissolve the flour. Add into your vegetable stew and add in your wine as well. Cook for a few more minutes while stirring.
