Anytime I have fresh speckle trout I love to pan fry it. Follow my recipe and within 10 minutes you will have dinner on the table with very little clean up.

Quick and delicious pan fried trout with a mouth watering simple cream sauce.

Step 1:

Preheat a nonstick skillet on medium heat.  Rinse and pat dry 4 medium to large trout filets, weighing approximately 6-8 ounces each.  Season both sides with salt, pepper, garlic powder and onion powder. (If you have an all-in-one seasoning or a seasoned salt, you can use that instead.) Then lightly dust both sides with all purpose flour.

Step 2:

Pour 2 tbls. of olive oil in skillet, place 2 trout filets in oil and cook until golden brown, 2-3 minutes. Turn and cook other side 2-3 minutes or until fish is done. Repeat with remaining 2 trout filets. While fish is cooking, bring a cup of heavy cream or half cup of cream and half cup of Half and Half to a boil, turn heat to low then add a 1/3 cup of Parmesan cheese, 1/4 teaspoon of garlic powder and 1 tsp of tomato paste.  Whisk until cheese is melted then take off of the heat. (You could add an ounce of sausage, or a 1/4 cup of mushrooms or shrimp if you like.)

Step 3:

Pour 1/4 of the sauce over the top of each fish filet. Dinner is served!  For an easy side dish, I cook instant brown rice and broccoli in the microwave. Voila! a complete meal in minutes.
