How To Make Grilled Tilapia Fish Tacos

Grilling in the summertime doesn't have to mean hamburgers and hot dogs.  Here's how to make a great summer meal that is healthy, colorful and eclectic. It can be easy and fun with a simple recipe like grilled fish tacos.

Start by selecting really fresh tilapia filets (4).  They should have a nice white color and very little odor, this is essential when making any fish recipe.  Place the tilapia in a zip lock bag while preparing the marinade.

For the marinade start with fresh lime juice about a quarter of a cup, and mix with equal parts olive oil.  Add fresh chopped cilantro about 1 tbsp and a tsp of salt and pepper.  Pour over tilapia and place in the fridge for half an hour.

Next you want to heat up the grill.  You want to start grilling the vegetables so they have time to cool before you handle them. First, start with the grilled corn.  Take 3 ears of corn on the cob brush with olive oil and salt and pepper and place directly on the grill.  These will need to be left on until they have a little bit of black charring on the outside.  Next you want to add the peppers and onions.  Cut the onions in thick slices almost like onion rings so they don't fall through the grates and cut the bell peppers in half, making sure to remove the core and the seeds.  The vegetables will grill up quickly and you want a nice charred look, but not burnt.

After removing the vegetables set aside to cool and place the fish on the grill on a piece of aluminum foil.  Tilapia is a delicate white fish and has a tendency to flake; the foil will help keep your fish in place. Also, do not add the extra marinade as this may cause the grill to flare up.  Grill 4-5 minutes per side, fish should flake easily and no longer be translucent when done.

Finishing up you will want to cut the cooled vegetables in chunks and add cut up tomatoes to create a chunky corn salsa. Place corn or flour tortillas directly on the grill to heat through.  Add the cut up fish, corn salsa, cheese and leftover cilantro to the tortilla and eat.  This will be a wonderful meal that is healthy and delights the taste buds.  For an additional flavor may want to add sour cream, guacamole and other condiments.
