Speaker: Bacon-wrapped Scallops hot off the grill are a crowd pleaser at any barbecue. Start by parboiling the bacon stripes for three minutes and set the bacon aside. Next rinse and pat dry one pound of scallops and remove the mussel. Soak the toothpicks in water for about 30 minutes so they don't burn on the grill. Next wrap a piece of blanched bacon or a turkey bacon around each scallop and thread with a toothpick to keep everything together. Transfer the wrapped scallops to a plate, then mince two tablespoons of fresh sage and sprinkle over the scallops, then drizzle with a quarter cup of extra virgin olive oil and lemon juice. Over a medium hot fire, grill the scallops for two to three minutes per side until golden brown. Remove the scallops from the grill and serve hot with lemon wedges. Bacon Wrapped Scallops.
