Learn how to make this classic italian recipe in a healthy way: Low-fat Fettuccini Alfredo

Sandy Gold: Hello everyone, and welcome I am Sandy Gold. I am going to show you today my own version of Fettuccine Alfredo that's low fat and tastes amazing. Fresh, fun, fast and healthy that's what my kitchen is all about. So before I get started with cooking, I wash my hands, I tie my hair and I must cut everything first . I am very organized in the kitchen. So I decided since I am making Fettuccine Alfredo and when I plated it's very neutral palate, I needed to give a little kick. So I am going to make some of my famous bruschetta wait till you taste that it's amazing. I love using Calabrese bread because it toasts really nice, then you get that extra crisp with your bruschetta. I love that. Now, we are going to start cutting things for the Fettuccine Alfredo. What are some things we need? We need mushrooms, that's what I put in, I am going to put in a chicken breast thinly sliced. Basil of course, I can't have any meal without fresh basil, we need butter, Parmesan cheese of course, to make the Fettuccine and I use fat free evaporated milk. I just got a phone call from my boyfriend saying that he is going to come over for dinner and what I always do with my guests is I get them to hop on in the kitchen. It's so much fun. Stats have shown that doing activities like cooking with your partner actually increases your bond. So when my boyfriends gets here, I am going to ask him what bond he thinks right now and what he thinks about that in the meal. He better say ten. Oh! He is here, great now he can help us up. Hi! Speaker: Hi, how are you doing? Sandy Gold: How are you? Speaker: I am fine. Sandy Gold: So how was your day? Speaker: Oh good, what you want me to do? Sandy Gold: Well, your first job is going to be washing the mushroom. Honey, I told everybody that when you do things like this it increases your bond as a couple. You know. Speaker: Oh yeah. Sandy Gold: I was wondering what would you rate our bond now? Speaker: Our bond right now as of today I would say it's around a four. Did I say four, I meant like seven. Sandy Gold: Because I am doing a healthier version of my Fettuccine Alfredo, I just want to use roughly about a teaspoon of oil. I will just put the chicken right in there. So I will put some salt and of course you can't have a meal without some hot chilly peppers. Because I am only making bruschetta for three slices of bread. I am just going to use one whole tomato. I cut it in half and I would like my tomatoes to be finally diced into tiny little cubes. So while jointing your tomatoes for the bruschetta mixture, I add a little bit of oil. I love to add fresh basils. Then you add a little bit of salt, some freshly ground white pepper. I like three full cloves of garlic, why not even four and last but not least, some oregano. I like to grind it up in my hands because it releases the full flavors. Then we will put it right into the bruschetta mixture. I am going to prepare the mixture that goes on to my Calabrese bread for the bruschetta. I add in some butter, a little bit of Parmesan cheese, some oil, little bit of black pepper, some oregano and last but not least some hot chilly peppers. So you can put it in the microwave 30 seconds till it all melts together uses the flavors. So the best way to put garlic butter on to your bread, is just put the bread over the bowl and drizzle it down. Firstly, the leftovers go right back into the bowl. Now, I preheated the oven on bake at 350. So now I am going to get the water in my pot prepared and let it start boiling. So five more minutes left to cook for the chicken. Now is the prefect time to add the mushroom, because I am only making this for two people, you only need about a quarter of a packet. Most Fettuccine Alfredo recipe calls for heavy cream and lots of butter, but because I am making it more healthy I am just going to put in one tablespoon of butter and fat free evaporated milk. You want to keep stirring this around until it starts to thicken up. Then you know it is ready to add in the Parmesan cheese. With the dish like this you don't even need to put the pasta into a strainer, you can put it right into the dish itself that's why I have used a deep set pot. Then you just give it a stir altogether. Look at these beautiful christinies. So now you take your bread and you add a little bit of the tomato left right on top, and last but not least you add a little bit of Parmesan cheese just like that. Doesn't that look so good? Now it's time to plate it and for me no dish is complete without my basil. Now, the best part of the show where we get to eat.
