This is one of my basic recipes that I use with all fresh vegetables including broccoli, but you could substitute any vegetable from baby cabbage hearts, green beans, snow peas, zucchini to spinach. Just adjust the cooking time accordingly.

Nina Simonds: Hi, this is Nina Simonds for Spices of Life. And we have another veggie quick bite. Today, we are going to stir-fry some broccolini with garlic. And did you know that -- here is some broccolini. Did you know that broccolini is actually a hybrid, it’s a cross between broccoli and Gai-lan, which is Chinese broccoli and it’s slightly sweeter. So what we’re going to do is, we are going to take this lovely broccolini, and I just cut it into sections, and then we’re going to blanch it in boiling water for about a minute and a half, and refresh it in cold water. And once you refresh it in cold water, that’ll keep the broccolini nice and bright. So it’s already been refreshed and we have some minced garlic right here, I like a lot of garlic so I’m going to use about two tablespoons of garlic. And we’re going to go over to the stove, and the wok is quite hot. And we are going to add about a teaspoon or a little bit more, a teaspoon and a half of olive oil. Now don’t be afraid to get your wok really hot, because you want to get that delicious, seared flavor in the vegetables. Then we are going to add the broccolini, the blanched broccolini. We are adding our garlic, sprinkle it right in, don’t be shy with the garlic. We are adding a little bit of salt, I say about a teaspoon. And once again, you can go to the website recipe section for all the recipes. Then I am just adding about two tablespoons of rice wine or you could add dry white wine, if I saying that 3 times. And you’re just going to toss this in over very high heat to give it a flavor of garlic, you want it to be still tender, and that’s it. There you have that stir-fried broccolini. Now you can do this with parsley, with spinach, with watercress, cabbage, really any type of the green vegetable, it’s delicious, and very simple. And what I like to do, is to make a bunch of this at the beginning of the week, and then I have it all during the week, I throw it in soups and stews, I reheat it in my microwave and it’s delicious.
