How To Make Salmon Starfish


  • 500g (1 lb) cold mashed potatos
  • 2 tbsp tomato ketchup
  • 1 egg, lightly beaten
  • 2 tbsp chopped chives
  • 375g (12 oz) cooked salmon fillets, flaked
  • 3 tbsp breadcrumbs, plus some for coating
  • butter, melted for brushing


  1. Pre-heat oven to 350 degrees F (180 degrees C).

  • Mash the potatoes with the tomato ketchup, egg and chives. Mix in the salmon and 3 tablespoons of breadcrumbs, flatten the mixture.
  • Use a large star-shaped biscuit cutter to cut 8 starfish shapes. Gently pull out the points of the stars. Coat with breadcrumbs and brush with melted butter.
  • Set the fish cakes on a lightly greased baking sheet. Transfer to the oven and cook for 4 minutes on each side.
  • Serve using green vegetables as a sea-weed bed !
