How To Make Banana Muffins


  • 60g (2 oz) of bran flakes
  • 300ml (1/2 pint) of milk
  • 125g (4 oz) of wholemeal flour
  • 1 tbsp of baking powder
  • 60g (2 oz) of butter
  • 60g (2 oz) of caster sugar
  • 1 egg
  • 2 mashed bananas
  • 90g (3 oz) of raisins


  1. Pre-heat the oven to 350 degrees F (180 degrees C).

  • Soak the bran flakes in the milk for 10 minutes. In a separate bowl sift the flour and baking powder.
  • Cream together the butter and sugar, then beat in the egg. Stir in alternate spoonfuls of soaked bran flakes and flour mixture. Gently fold in the mashed bananas and the raisins.
  • Line a muffin tray with paper cases and half-fill each case with the mixture. Bake in the oven for 30 minutes.
