How To Make Spinach Soup

Ingredients:

  • 6 cups torn fresh baby spinach, packed
  • 1 whole onion sliced
  • 2 peeled and sliced medium-sized potatoes
  • 2 tbsp or ¼ stick butter
  • 3 cups water
  • Salt&pepper
  • 1 hard boiled egg crumbled

Directions:

  1. Saute onions in butter using medium heat.

  2. Once slightly brown and fragrant, add water and potatoes.

  3. Cook and stir occasionally for 15 minutes until potatoes are soft.

  4. Toss in spinach, and boil for another 30 minutes using low heat.

  5. Season with salt and pepper.

  6. Remove from heat, and let stand for 10 minutes.

  7. Blend cooked ingredients until pureed.

  8. Serve in bowl with crumbled egg on top.
