Once slightly brown and fragrant, add water and potatoes.
Cook and stir occasionally for 15 minutes until potatoes are soft.
Toss in spinach, and boil for another 30 minutes using low heat.
Season with salt and pepper.
Remove from heat, and let stand for 10 minutes.
Blend cooked ingredients until pureed.
Serve in bowl with crumbled egg on top.
Blender or Food Processor
Try not to over season with salt. Soup may seem a little tasteless at first but it takes at least an hour before the ingredients really absorb the seasoning, leaving it saltier. So you may want to serve it reheated.
Drizzle with 1 tsp of heavy cream before serving to replace hard boiled eggs. Or be creative and sprinkle crispy bacon on top!
To increase cooking speed, chop potatoes into smaller pieces, and toss spinach in at the same time.
