Ingredients:

  • ¼ cup fresh lemon juice
  • 1 ½ cup granulated sugar
  • 1 tbsp lemon zest

Directions:

 

  1. Mix all ingredients together in a medium-sized saucepan.

  2. Cook in medium heat until mixture is well incorporated.
  3. Test mixture by dipping a wooden spoon into it; when you pull out the spoon, a thin string of glaze should follow. If the texture is thicker than described, keep stirring until the glaze is thin.
  4. Once ready, pour glaze over Gingerbread, Poppyseed muffins or just plain vanilla cupcakes. Recipe is enough for one loaf or 12 muffins/cupcakes.
Caution:
Do not go beyond medium heat. Once the sugar is burnt, you can't go back!
Quick Tips:
When glazing cakes, try keeping the saucepan in the heat by bringing the cake to the stove. This helps prevent the glaze from hardening while you?re working with it.
Glaze baked goods over a cookie rack on top of a baking tray. This eases your cleaning process.
To make orange glaze, replace lemon juice with orange juice (and use orange zest instead).
