2 - 6 oz jars of marinated artichokes
1 small onion, chop fine
1 clove garlic, chop fine
1/4 cup cracker crumbs
1/4 tsp salt
1/8 tsp oregano
1/8 tsp pepper
1/8 tsp Tabasco sauce
1/2 lb sharp cheddar cheese, shredded
2 tbsp minced parsley
Add onion and garlic to the juice from ONE jar of artichokes. Sauté until tender.
Discard juice from second can of artichokes.
Beat eggs. Add cracker crumbs, salt, pepper, oregano, Tabasco, cheese and parsley.
Then add chopped artichokes and onion mixture. Mix.
Spread onto greased 7"x11" pan.
Bake 30 minutes at 325 F degrees.
Cool and cut into 1" squares.
