How To Make Zucchini Casserole

Ingredients:

  • 2 slices bacon
  • 1/2 cup chopped mushrooms
  • 1/4 cup minced onion
  • dash of minced garlic
  • 1/2 cup melted butter
  • 2 zucchini, shredded
  • 1 1/4 cup bread crumbs
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup swiss cheese, shredded

Directions:

  1. Fry bacon, drain, crumble.
  2. Sauté mushrooms, onion and garlic until tender.
  3. Combine bacon, mushroom mixture and zucchini.
  4. Combine 1 cup of crumbs, egg, salt and pepper.  Stir well.
  5. Pour into greased casserole.
  6. Combine cheese and 1/4 cup of crumbs.  Sprinkle on top.
  7. Bake 350 F degrees for 40 minutes.
