Ingredients:
- 2 cups sugar
- 1 1/4 cups Wesson oil
- 2 cups pumpkin
- 4 eggs
- 2 cups flour
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 cup coconut
- 1/2 cup chopped nuts
Directions:
- Beat sugar, oil, pumpkin and eggs well.
- Sift flour, baking powder, baking soda and cinnamon. Add to pumpkin mixture.
- Add coconut and nuts.
- Bake in 3 layers at 350 F degrees for 30-45 minutes.
- Ice when cool.
