How To Make Lemon Ginger Cookies


  • 2 cups all-purpose flour and more for rolling
  • ¼ tsp salt
  • 2 tsp ground ginger
  • 1 cup (2 sticks) unsalted butter (softened)
  • ¾ cup granulated sugar
  • ¼ cup lemon zest
  • 1 tsp vanilla extract
  • ½ cup toasted almonds (grounded)
  • ½ cup crystallized ginger (diced)



  1. Sift flour, salt and ground ginger together. Set aside.

  2. In a large bowl, beat butter and sugar until fluffy.

  3. Mix in lemon zest, vanilla and ground almonds until incorporated.

  4. Slowly pour in flour mixture, and mix on low speed until dough just forms.

  5. With a wooden spoon, stir in crystallized ginger.

  6. Cover dough with plastic wrap and chill for about 30 minutes.

  7. Roll dough on floured surface to about ¼" thick, and cut with cookie cutters.

  8. Place ½" apart on cookie sheet and bake for about 10-15 minutes (timing depends on the size of your cookie cutter-the bigger the cookie, the longer the baking time) until edges are brown.
