Ingredients:

  • ½ cup (or 1 stick) unsalted butter (softened)
  • 2/3 cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ½ tsp almond extract
  • 1 cup all-purpose flour (sifted)
  • ½ cup almonds (grounded)

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a mixing bowl, combine first five ingredients until light and fluffy.
  3. In another bowl, mix flour and almonds together.
  4. Add flour mixture to the mixer and mix on low speed until well blended.
  5. Fill cookie press with dough, and fit the press with desired disk.
  6. Press dough out onto ungreased cookie sheets leaving them 1" apart.
  7. Bake one sheet at a time for about 10 minutes or until firm.

Quick Tips:
If the dough turns out to be too dry, add about 1-2 tbsp of milk.
If the dough turns out to be too soft, keep it in the refrigerator for about 30 minutes before using.
Press dough to form shapes, freeze them on a tray, and place them (frozen) in an airtight container so that they?re ready for baking the next time you have visitors.
