How To Make Mini Frosted Chocolate Cupcakes

Ingredients:

  • ½ cup (1 stick) butter (softened)
  • ½ cup granulated sugar
  • 1 tsp vanilla
  • ¾ cup self-rising flour
  • 2 eggs
  • 3 tbsp milk
  • 2 tbsp chocolate sprinkles
  • 1 tbsp coconut flakes
  • 1 tbsp crushed choc cookies
  • ½ cup semi sweet choc chips
  • 24 red candies (i.e. mini red M&Ms)

 Directions:

  1. Preheat oven to 400 degrees F.

  2. Combine first five ingredients, and mix until incorporated.

  3. Gradually add milk, and keep mixing until batter is smooth and creamy.

  4. Add chocolate sprinkles, coconut flakes, and crushed cookies.

  5. Stir until just mixed.

  6. Grease a mini-muffin pan with butter.

  7. Fill pan evenly with batter; there should be enough for 24 mini muffins.

  8. Bake in the oven for 10-12 minutes until brown.

  9. Remove muffins from pan and immediately place 4 choc chips on each muffin.

  10. Wait 2 minutes for chocolate to melt.

  11. Using a butter knife, spread melted chocolate evenly.

  12. Place red candy on top of each cupcake.
