Dan: This week in the galley, we’re down here at the beautiful Las Rocas Resort and Spa right on the coast here at Baja, Mexico. We’re kind of just south of Rosarito and way north of Enchinada. Cesar, thank you for having us back. Cesar: You’re welcome then. Dan: This is Cesar Rivera. He’s the manager here and standing next to us is his chef. And what is it that the chef has for us today. Cesar: [Foreign Language] He’s going to do a red snapper ala colver so that’s the name of the name of the preparation of the fish. So, it’s a very simple preparation. He’s telling me right now. So, you take everything out of the fish. Dan: He even took out the whole backbone and everything. Cesar: He took out everything, yes. Dan: All the bones are out. These are just eggs? Cesar: They’re just eggs. It’s going to be the base actually for them. Dan: This is a little different too because a lot of chefs would like to use the egg first, but this is a nice process to make it thicker. And he’s got some breadcrumbs here? Cesar: Yes. We got some breadcrumbs right here. So after the egg—just like you mentioned exactly, it’s like a different thing. Dan: Right. That fish looks delicious. Cesar: It’s going to be delicious. Actually, I assure you. I’m sure you’ve had this fish a few times. Dan: Actually, yes. They’re one of my favorites. Cesar: So now, he’s going to do the base. As you can see, it’s going to be mounted on some bread. He does the preparation because he makes it look beautiful. Dan: That’s only going to look beautiful for a little bit because I’m going to stick a fork in that. I got to try a piece of this. He’s got all the mustard in there. That’s very good.
