Our new Fix goes to Ben of Carrboro North Carolina, he sent me a recipe for broccoli cheddar soup says when he makes this sometimes it’s good, sometimes it’s bad. Don’t worry Ben I got an awesome fix that’s going to get you right back on track. All right Ben first things first let’s get our pan on a high heat and we’re going to cook off our vegetables. Ben be sure to get a really nice caramelization on our onions before we add in our broccoli, if you do this our flavors going to be completely different. We’re going to cook this broccoli slightly before we add in our chicken stock and if you don’t know how to make chicken stock Ben, check out that video under sauces. Ben we’re going to let those ingredients simmer, in the mean time we’re going to make a quick rue. All right, Ben once our soup is boiling we’re going to add in this rue. This is going to help thicken it up before we add in our cream. Ben it takes about 20 minutes to cook the rue out and notice it gets really thick. Before we add in our cream we’re going to adjust our seasonings. All right, Ben now comes the fun part, all of our ingredients are in, now we need to blend it. Now you can use a hand mixer or a regular blender, the point being this soup needs to be puree. Broccoli cheddar soup Ben, let’s stir in our Sharp cheddar.
