Hi, and welcome to Cajun Cooking TV. Tonight we have made beef stew and I am going to show you how to make mashed potatoes and I don't mean from the box, these are from real Idaho potatoes. So let's get started. Tonight I have started out with a 5 pound bag of Idaho potatoes. These are a medium size, I have selected two potatoes per person, and I went ahead and cut up some here already, into smaller cubes, and I am just going to show you how I peel a potato. I have two kitchen gadgets here that are vegetable peelers. This one is pretty good, it swivels like this, so you can change the direction, and it does like this, and you have seen other models kind of like this, but this is my favorite one. This has a little stainless steel blade. It's very ergonomic, and it is so much faster, you just do like this. Hold the potato and pull on the potato peeler away from you, and it just goes really fast. Just like that, you don't have to get it all off, and then using a peeling knife, I cut it in half, and just cut it into smaller, say, 1 inch pieces, and we will throw those here. Now we have our potatoes peeled and cubed, and I am going to add just a touch of shrimp and crab oil into the boiling water. I have already salted this boiling water, and I am just going to put a tiny touch of this, you don't want too much. Just it, not bad just like that. And now I am ready to go ahead and put in my potatoes, and we are going to let these boiled about 10-15 minutes. So we'll see you in a minute. Hi everybody, we are back, it's been about 12 to 15 minutes. And as you can see, I'll just show you right here, the potatoes you can just break through them with a spoon or fork, that's the consistency you want. So as soon as they were done, we drained them in a colander, and then I put them in this big glass mixing bowl. So now we are ready to mix some ingredients together and get started. First, I am going to mix in about two packs of butter here, that's about two tablespoon of butter and I have a quarter cup or about half a container of sour cream, I am just going to scoop that out and I have a half-a-cup of milk. I am just going to add about half of that right now to see what the consistency is. And I have a mixer, you need a mixer, and let's stick in there and let's do it high. You have got to mix that up. Now, it looks we are going to need the rest of that milk. I am going to add to that, and that's probably done. Now I am just going to add a dash of Creole seasoning, just a little, just a little like that. And I have already salted the water, so I don't want to put too much salt there. And look how creamy that is. We are going to stir that up, and I will show you in just a minute how beef stew and a homemade mashed potatoes are so good.
