Male: Hi, I am David Epstein favorite time of the year picking tomatoes. We are going to show you how to make tomato sauce and then can it out. You will thank me from January. All right so we have come inside and you know I picked these tomatoes a couple of days ago. You can lay your tomatoes sit for a few days and keep cool and dry. Do not refrigerate tomatoes before you start using them for sauce. So the first thing we need to do is take the skins off. We are going to boil some water. Boil the tomatoes for about a minute that is going to help the skins to come off and then we will start working with them.
As we are putting the tomatoes in the boiling water what I do is I just put a thin slice down the length of the tomato just one. That is going to make it much easier to remove the skins. All right so the skins begun to peel off so we are going to get these into cold water so we can peel the skins off. I sliced the tomatoes in half and after they are cool. Let this set for 20 minutes until most of the water has run out of your tomatoes. I have always to add an onions and garlic. You can add other things. You could add in bell pepper, you could add in regular ground pepper, bay leaf, you can add in some shredded carrots. Really it is up to you.
We are going to cut up some of these different vegetables. We are going to sauté them in olive oil just until they are soft. I just put in enough oil that covers that bottom of the pan and a little more and we will put this on a low heat. And then we are going to start putting our onion in. I was going to crush some of that garlic in there. Do not let the garlic get brown as it will get better. Here is that mixture. It is all sautéed. Let us get those tomatoes in here. So we have got our tomatoes and we are going to put these carefully into the pot. I like to add in a couple of stocks and celery, a couple of bay leaves, a quarter cup of chopped basil and a teaspoon of black pepper.
I am going to let that sit for two hours in a low heat. You want to stir it occasionally after two hours if it is not thick enough add one or two cans of tomato paste similar to another couple of hours and then we are going to put it through the food milk and you are ready to have some pasta. It is where the sauce is done. We are going to take the seeds out using a food mill and what that does is it leaves behind all these seeds which we do not need and we it leaves is this, pure and silky tomato sauce.
