Hey! Thanks for stopping by, you’re watching fixmyrecipe.com. I’m Chef Billy Parisi and our new fixed goes to about 50 people in different places. I get constant e-mails “Oh! I made this chicken or this steak, what should my side item be?” So, you know what we’re going to dedicate a few episodes to potatoes and side dishes. Today, we’re making twice baked potatoes and it has nothing to do with the fact that we didn’t bake them right at the first time. Stay tuned, we’re going to fix everybody up.
Okay everybody, the first thing we need to do is bake our potatoes. So, what we’re going to do is roll them an olive oil, get some salt on them, and then we’re going in the oven 350 degrees about an hour to an hour and 20 minutes. Once potatoes are in the oven, this gives us ton of time to get ready to prepare the ingredients necessary for these twice baked potatoes.
So, we are going to add tons of flavor. First, we’re going to cook off some bacon, cut up some scallions. We’re going to add in tons of great stuff to these twice baked potatoes. All right, this looked awesome, super simple! Now, what we’re going to do is cut them in half, take all those goodness in the inside right out, run it through a food mill. If you don’t have a food mill, use a blender. Next, were going to incorporate all those fattening flavors that make this so awesome!
Then, we’re simply going to stuff it right back into the potato, we’re going to brush with little melted butter. We’re heating it back in the oven that’s why they’re called twice backed potatoes. It takes about 15-20minutes on 350 degrees. Take them out, you know I’m going to eat one. Oh, man how awesome that this look! Bake twice for a wonderful reason. We’re going to plate them up and I got to try some. Dear lord, there is just so much flavor inside of this twice baked potatoes. You get all that bacon, you taste all that cheese, and all that fat. Fat is flavor, don’t forget it. 50% fat, 50% potatoes, you will love these twice baked potatoes! Come back tomorrow and see our new featured fix of the day.
