Thomas: Hi! I am Thomas, Chef Thomas, from L'École Culinaire. No matter, if you put Thanksgiving every year for your family or this is the first time you are celebrating your Thanksgiving. I am going to show you some tips inside that's going to make your life much easier. Let's go. Welcome to L'École Culinaire's kitchen. Beautiful kitchen, say your kitchen. Just want to let you know. You don't have to be in a setting like this to make the thanksgiving turkey perfect. I am going to show you some tips today that's going to make your life much easier in your own kitchen. Today, we are going to talk a little bit about some different kinds of cutting boards. This one in particular is a wood cutting board. This is the one that you are going to have actually rest your turkey on. As you understand it has some grooves in around here. This is actually going to help of the juices around the turkey. Only this red cutting board is for raw meat, raw meat, raw turkey no portas no chance of cross determination whatsoever. So using color coated cutting boards, in the institute or in your home, will definitely help you out. Next is just a fiberglass cutting board. Very just basic normal cutting board that we use here. You certainly have to have towels. Towels, you are just going to need to supply them. You are going to catch grease. You are going to be washing your hands frequently. Next, you are going to need some latex gloves. Latex gloves are good for several things. Keep your hands clean. The phone rings, because you are going to get people they are going to say, we are going to be late and you are right in the middle rubbing down your turkey. Well, you can actually take these gloves off and you can answer the phone and just put them back on there. Next is butchers twine. Butchers twine, you could find in any grocery store. Smaller version of course, but you can cut this down. This is what we are going to trust our turkey. You definitely going to need a good pair of tongs. Tea tongs are going to do really good. You need nice thick metal gauge tong. You are going to need a offset spatula with the straight edge. This time it's going to use in the roasting pan together all the drippings from your pan to make your gravy which we will talk a little bit later. You have two different kinds of thermometers. One, this big thermometer here is actually going to be put in the turkey when it's raw. That is going to be in the turkey constantly for the entire cooking process. With this one here, this is an instant thermometer. This one you are actually going to put into your turkey and get and accurate reading. Next, we are going to go to the roasting pan. You need a nice sized roasting pan. The bigger your turkey, the bigger the roasting pan. You are also going to need great grills in the bottom, because you don't want to turkey swimming and all the liquids. We have some aromatics, which we are going to put in the cabin. So many aromatics are a little bit different. They are not really used traditionally in a turkey preparation, but you will also see sage, beautiful sage, fresh sage, anytime we can use fresh ingredients the better because you are going to get a lot more flavor out of them. Absolutely, we need some garlic, Schezuan peppercorns, Hawaiian salt and a little bit of juniper berry. Also we have some thyme and some oregano and a little bit of aromatics, we are going to use a little bit of cinnamon stick. All we need is one more thing that's the organic bird. Let's go get it. These birds there are no chemicals ingested into this birds, not even vaccines. No antibiotics, no hormones, nothing to make this bird, just a natural bird. Gets the view whatever it wants. How it wants to feed. How it wants to be sheltered. There is a few things that you really need to know when you are purchasing an organic turkey. One, is the turkey fresh. We would certainly want to look right here on this date where it says sell by. Every product here would have a so on sell by date on it. So you want to make sure that the corresponds on what day it is that your shop of Whole Foods Market. Well, I really think you get the just to what organic turkeys are all about.
