Learn how to make Huevos rancheros AKA Ranch Eggs ,a classic Mexican breakfast dish.

Hey, thanks for checking out FixMyRecipe.com. I’m Chef Billy Parisi and our next recipe goes to Alex Jelos of Jefferson City, Missouri. He submitted a recipe to us for huevos rancheros. First of all, this is what you get when you got country folks trying to do authentic Mexican cuisine. Don’t worry Alex, we got you covered right here. First, let’s get our refried beans with a little bit of butter. Put them on the stove and heat them up and then let’s make a quick salsa. Dice up some fresh Roma tomatoes. Dice up some red onions and dice up one beautiful jalapeno, some fresh cilantro, a little bit of Italian kick to this here, salsa. A little bit of garlic, lime juice and of course salt and pepper. You simply just want to mix it together. The next step we’re going to do is simply heat up these corn tortillas by frying them off. You don’t want to cook this to look crispy. You simply want to heat them up then put them on a paper towel and then drain the grease from it. I'm just going to cook another one because I’m going to eat too many here, right up this next one. Then we’re going to put our eggs on. All right our next tortilla is nice and warm. It’s going to soak up a lot of olive oil so we need a little more over the pan before we fry our eggs. Don’t forget Alex, salt and pepper. Mexico is known for big flavors. Now that our egg is cooked and our salsa is done, all we want to do is simply add our ingredients right on top of our shell. Don’t forget it’s not just eggs and salsa. There’s a lot more ingredients included in it, follow me. Put our shell down, and of course you’ve got to have refried beans, what the heck is huevos rancheros without refried beans, just spread a little thin layer on there. Next, we’re going to put some crispy bacon on here that we baked off and of course we’re going to add our egg right on top there. And let’s not forget some fresh, shredded Cheddar cheese and of course what about our beautiful salsa. Simple as that, oui facil senor Alex. Alex, Alex, Alex, seems by the look of your recipe you’ve been visiting Taco Bell one too many times. Stick to this, this is very authentic, very healthy and a lot of flavor you’re going to get from it, used bacon, refried beans, make a homemade salsa. Don’t put that picante stuff right on top.
