One way to extend the grilling season into the fall is to take a traditional summertime recipe and make it with a fall twist and we have done just that with this recipe. It's potato salad with hot smoked sausage. We are going to start with Hillshire Farm smoked sausage. I am using the hot variety, but you can use any flavor you like, turkey, beef, even light. We start by brushing our sausage with a little bit of oil, this will help it stop sticking from the grill. We place the sausages on to the grill and I can already smell their smoking aroma coming off, this is going to infuse into the potato salad perfectly.
While the sausages are grilling, I am going to mix together the rest of the ingredients. I am going to take some red skin potatoes that I had boiled and chilled the day before and put them into a large bowl. I then add some diced celery, some diced green peppers and some scallions, and now it's time to take my Hillshire Farm smoked sausages off the grill. Look at how juicy and delicious they are, they really going to add a punch to this potato salad. Once I chop up my sausages, it's time to add them to the potato salad and now to make a simple dressing. I am going to take some white wine vinegar, put in a little bit of Dijon mustard, some hot pepper sauce and then whisk in some vegetable oil. Now, I put it into my potato salad and mix and this is what it looks like and doesn't this look fantastic.
