Wood Ear, Gold Needle, and Egg Stir Fry
Chef White Lily: I cooked house food since I say I cooked house food people think that’s not going to be good. But I’ve cooked good house food, it’s not only healthy it is also very good and very tasty okay. So, the unique thing about my show is I try to make it every food that’s balance in a such way that is good for your health. And if you have some conditions with your body, it will help to heal. Okay, and if you already have a good health it will keep you maintain the good health.
And today I am going to cook three items; the first thing is a vegetarian dish. Nowadays people try to live healthy and there are lots of vegetarians. Okay, so I used to cook lots of basically most of dishes always some sort of meat you know. You got to add a little meat to give the flavor. Chicken or fish or pork or beef whatever, but I try to help the vegetarian friends also enjoy the good food.
Today, first thing I’m going to cook is -- throughout the show I will talk about some herbs and some between the vegetable and herb or fruit and herb and we eat everyday, all kinds of food but we don’t really think much more about what is good for, why I’m eating this? What’s my body need? So, we’re going to talk some things like that okay?
Today, I picked a flower, we call it Gold Needle flower. Okay. I have the package I believe the translation is wrong because it says it’s a dried lily flower but it’s not a lily flower, I believed it’s a dandelion. It has some little yellow flower. This is the stem of that. What this does is it helps -- because it has a very good fiber so it helps in digestive system. It also has a cooling effect.
So, often we eat, especially today’s food, you go to restaurant all you cook at home often we don’t realize we put a lot of heat inside that body. I don’t mean temperature but it heats up the body inside.
So this one also has the cooling effect so if people have a high blood pressure this is good item. And same as this I’m doing this because we’re in summer so I put kind of emphasis a little bit of summer items. This is called the wood ear; it kind of looks a little scary. It’s mushroom family, it grows on the dead wood, dead trees. It doesn’t grow on the grass like a regular mushroom but this has a very -- you know we talk about the ying and yang, this is very ying and it’s good for blood especially good for women. With any women body condition, this helps a lot okay. And then I am going to cook with the eggs.
Add a little bit of a green onion to give a flavor to it. Now, I will still fry this. I will get this on. We use a little bit of oil just to make the fry pan not too sticky to the bottom. Okay, you don’t need the too much oil; personally I don’t like a too greasy food.
This is about natural size okay, I did not cut it and if you are going to prepare this at home or anything you can cut it to half or just leave as it is okay. All right, stir fry needs hot temperature, so we are going to cook just to give a little flavor. This is what I do, I add a little bit of salt to it in the very beginning and then later on add more as needed okay.
While waiting for that I'm going to get the eggs in the bowl and I have to watch it, don’t let your green onion burn because they become bitter okay. Now, this is rather kind of -- you can just tear it to make it smaller. Now the hot oil will make the flavor of the wood ear come out.
Some people tell me wood ear doesn’t have a much of taste but it does, you have to know how to get it that okay. Now, I’m just going to add this to work. Now all these cooked together also gives a very nice color. Wood ear when it gets hotter it starts popping that’s when the flavor comes out but you must be careful don’t let it cook too long because if you cook too long it will melt. It doesn’t melt like water but it kind of get too soft. It turns a little bluish and we don’t want that okay.
Now, always get some water so they don’t burn. Okay this is almost done. You don’t need too much stuff seasoning in it. I basically use a little bit of salt and a little bit of sugar that’s it. Because if you put too much of flavor anything thing in it you kind of destroy the ingredients flavor by yourself and that we don’t want that happen.
All right, I'm going to use this plate to take this out for now because stir fry you have to cook it separately. Okay, most of the time I cooked one item at a time because each ingredients takes different amount of heat so you can’t really cook them together okay.
If you say “well stir fry is easy, I’m just going to you know -- here is my meat and here is my vegetable” you throw everything in it. It’s not going to turn out nice. The secret, secret to the stir fry is to cook them separately okay.
Now, this goes real fast okay, I do need a little bit of pepper in it. Is this pepper? Okay jus tiny bit. Now, I am cooking is -- one thing I do I'm also a Chi Gong master, I teach Chi gong. Chi Gong is an energy work all right. I’ve been teaching it over 20 years and because of doing so always try to put more attention to the health and I often advised my students how to eat healthy. Because our body change all the time, each season is different and the of course the life itself makes the body change all the time. You got stressed your body is different, if you have something happening all the emotions changes they all put different things to health.
So, first thing is not go to doctors, first thing is to look what do you put in your mouth. Remember that, it should be everyday issue, every meal issue okay. People go, “well my stomach is not feeling very good and then okay let’s see the doctor, get some pills, find aspirin”. Rather think about it “why I’m having this”.
This is sesame oil. Sesame oil doesn’t take heat so I put it at end and I think this one is done alright. This is a vegetarian dish. I’m going to put this here because it got a pretty yellow color. Cold needle flower with some wood ear and eggs, very simple, very easy to make okay with green onions. There you have it. Thank you.
